What is the chemical reaction that turns a aluminum pot black when boiling potatoes?

The black coating on aluminum is a result of oxidation, which is due to reaction with oxygen in the atmosphere. Potatos don’t really contain any substance which should affect the oxidation that I know off, as they are primarily just starches and some sugars.
